Wildflower Honey Cake Recipe
Ingredients:
- 1 Cup New Zealand Wildflower Honey plus extra for serving
- 1 Cup applesauce
- 3 eggs
- 1 Tablespoon mixed spice
- 2 Cups flour
- 1/2 Teaspoon baking powder
- 1 Teaspoon baking soda
- 1 Cup of strong, cold coffee
Method:
- Beat together the New Zealand Wildflower Honey, applesauce and eggs until well combined (if the honey is too stiff, soften it to a pouring consistency first. This can be done in short bursts in the microwave, in a saucepan over a gentle heat or by standing the jar in warm water).
- Sift the dry ingredients into the honey mixture and add the coffee.
- Mix together until just combined and pour into a greased 9x13 inch pan.
- Bake in a preheated 325F oven for around 60 minutes. Check the mixture regularly, as the baking time will vary with your oven. It may take as long as 90 minutes to bake, or as few as 40.
- To Serve: While the Wildflower Honey Cake is still warm, drizzle with 1/2 Cup of New Zealand Wildflower Honey. Alternatively, top each individual slice with a spoonful of warm honey.
